Peeps Carrot Cake

Peeps carrot cake

This Peeps carrot cake was a big hit when I posted it on social media. The funny thing is…the only thing “carrot” about it are the carrot candies on the outside of it! But this is such a fun & easy Easter themed cake that everyone will love.

I have always been the queen of boxed mixes for cakes. Something about cake flour and buttercream frosting just intimidates me. Maybe someday but for today, we are going quick and easy. This was just a simple Betty Crocker white cake mix and two tubs of white vanilla frosting. The magic is in the candy carrots. And you guys, they are so easy to make. If you have kiddos, they will thoroughly enjoy this part!

SUPPLIES NEEDED:

  • Cake mix of choice
  • Frosting of choice
  • Sprinkles
  • Peeps
  • Meltable Candies (I use sweet tooth fairy meltables from Michael’s)
  • Piping bag or even a sandwich baggy

Bake your cake as directed. Frost your cake when it is fully cooled down. And this part is important…throw those sprinkles on as soon as you frost it. Otherwise your frosting will dry and the sprinkles won’t stick. Ask me how I know! And top it off with your favorite Peeps marshmallow bunny.

When melting your candy wafers, be sure to keep a close eye on them. I start with 30 seconds, give it a stir and then microwave in 15 second intervals. You want to make sure you don’t burn them. When I made this cake, I didn’t have any piping bags on hand so I simply cut a tiny hole in a corner of a sandwich baggy. Line a cookie sheet with wax paper or parchment paper and squeeze out your carrot shapes. Place the tray in the refrigerator for just a couple minutes to harden. Then place on your cake as you wish.
